Gin and Pansies
Ingredients
- 1 1/2 oz. Violette gin
- 2 oz. blueberry syrup
- 1/2 oz. lemon juice
- soda
- blueberries, thyme leaf and edible flowers as garnish
Steps
- pour blueberry syrup in a glass
- put a few ice cubes in the glass
- pour remaining ingredients into the glass to create separate layers
- garnish with pansies (edible flowers) and a sprig of thyme
For the blueberry syrup
Ingredients
- 1 cup sugar
- 1 cup water
- 1/2 cup fresh or frozen blueberries
Steps
- Grind blueberries to a fine texture in a blender
- Pour water and sugar in a pot
- Whisk vigorously
- Add blueberries and bring to a boil
- Boil for 1 minute, stirring constantly, and simmer on low heat for another 5 minutes
- Remove from heat and allow to cool
