Gin and Pansies

Ingredients

  • 1 1/2 oz. Violette gin
  • 2 oz. blueberry syrup
  • 1/2 oz. lemon juice
  • soda
  • blueberries, thyme leaf and edible flowers as garnish

Steps

  • pour blueberry syrup in a glass
  • put a few ice cubes in the glass
  • pour remaining ingredients into the glass to create separate layers
  • garnish with pansies (edible flowers) and a sprig of thyme

For the blueberry syrup

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1/2 cup fresh or frozen blueberries

Steps

  • Grind blueberries to a fine texture in a blender
  • Pour water and sugar in a pot
  • Whisk vigorously
  • Add blueberries and bring to a boil
  • Boil for 1 minute, stirring constantly, and simmer on low heat for another 5 minutes
  • Remove from heat and allow to cool
